Peel the potatoes, then cut them into thin slices (about 2 mm thick) using a mandolin.

Preheat the oven to 200 degrees (convection heat).

In a salad bowl, mix about 7 tablespoons of olive oil, grated Parmesan cheese, and a little thyme.

Put the diced potatoes in a salad bowl and mix with your hands to coat all the slices.

Line a baking tray with parchment paper or a baking mat. Lay the potatoes on top of each other about 6 cm high.
