Ingredients

For a cookie:

  • 130 g Wheat flour (t45 to t80)
  • 1 a pinch Good salt
  • 25 g Water
  • 50 g Walnut oil

To decorate:

  • 300 g Onions
  • 2 issue olive oil
  • 3 issue agave syrup
  • 100 g False fat (vegan foie gras)
  • salt pepper

instructions

  1. In a bowl, mix flour and salt. Add oil and water (preferably cold). Knead for a few seconds until you get a homogeneous dough.

  2. Spread it gently between two sheets of baking paper, then put it in the fridge for 30 minutes.

  3. Finely chop the onion. Heat a frying pan over medium heat with a tablespoon of oil and fry the onions for ten minutes.

  4. Once the onions have softened, add the agave syrup and increase the heat slightly. Continue to cook until the syrup has completely evaporated. For reservations.

  5. Preheat the oven to 180 degrees. Take the dough again and then cut 4 circles using cookie cutters. Bake for 15 minutes. At the end of cooking, leave to cool.

  6. Add a slice of foo-gras on each cookie and top with the caramelized onions. Season with salt and pepper to finish. Serve it warm or cold with arugula salad.
