Ingredients
For fruit:
- 1/2 pineapple (or mango)
- 2 passion fruit
- cinnamon
- 1 vanilla seeds
- Maple syrup
For the missing brioche:
- 3 egg
- 30 a key milk (vegetable or not)
- 2 bags vanilla sugar
- 6 Slices Dry brioche
- A little powdered sugar
- A little coconut oil for cooking

Preheat the oven to 200 degrees. Peel and cut the pineapple into quarters and place these pieces in a small gratin dish.

Add the hollowed-out passion fruit, vanilla seeds, and a pinch of cinnamon. Drizzle with maple syrup, mix, and bake for 25 to 30 minutes.
For the missing brioche:

In a bowl, mix the eggs with the vanilla sugar. Then add the milk and soak the dry brioche pieces for 4 minutes on each side.

Heat a lightly oiled frying pan over medium heat. Once hot, place the brioche slices and cook for 2 minutes on each side, until golden brown.

Place the brioche toast slices on the plates and add the toasted pineapple. Sprinkle with powdered sugar and enjoy without further ado!
