  • 300 grams of roasted hazelnuts
  • 30 grams of cocoa
  • 20-30g caster sugar (preferably fructose)
  • a pinch of salt
  • 10 ml vegetable oil
  • 200-300 ml of almond milk

How to prepare:

1- In a blender, grind the hazelnuts until you get a smooth and homogeneous texture.

2- Add cocoa, fructose, salt (our secret ingredient) and a little milk and mix everything. You should get a thick mass.

3- Gradually add the remaining milk and whisk again until you get the desired texture.

4-Put the dough in a jar or bowl and keep it in the refrigerator, as the chocolate and hazelnut dough becomes thicker.

Another “Nutella” recipe that’s vegan and gluten-free

For Nutella fans who are vegan and/or have a gluten allergy, here is a recipe made for you without gluten.

Ingredients :

  • 3 cups raw or roasted unsalted hazelnuts
  • 1 teaspoon of pure vanilla extract
  • Half a teaspoon of sea salt
  • Cups of dairy-free dark chocolate chips
  • 1-2 tablespoons agave or maple syrup (or stevia) for those who want a sweet spread

How to prepare:

1- Preheat the oven to 180°C and place the hazelnuts on a baking tray to spread in a single layer. If raw, roast for 12 to 15 minutes. But if the hazelnuts are already roasted, cook them for 8-10 minutes just to loosen the shell.

2- We take it out of the oven and let it cool for a while. Then transfer it to a large kitchen towel and roll it up by hand to remove the skin.

3-Then add the hazelnuts to a blender (ideally on high speed) or food processor and blend for about 10 minutes, until you get a creamy hazelnut butter.

4-Meanwhile, heat the dark chocolate in a water bath or in the microwave (30-second increments) and set aside.

5- Take the creamy and soft hazelnut butter, add the vanilla and salt and mix well. Then add the melted chocolate little by little and mix until it’s all homogeneous and smooth. Taste and season, adding more salt or vanilla to taste.

6-Note: If the spread is not sweet enough for your taste, add 1 to 2 tablespoons of maple syrup or agave syrup, or stevia to your liking.

7- Transfer the paste to a clean jar and keep it in the fridge.
