  • Chopped parsley and rosemary
  • 1 teaspoon spices such as paprika, curry or nutmeg

How to prepare:

  • Preheat the oven to 200 degrees, prepare a baking tray and line it with baking paper.
  • Wash the potatoes and put them whole in a pan filled with water. Then boil the mixture for 20 minutes. Test its softness with a fork and drain.
  • Meanwhile, clean the pumpkin and cut it into cubes. Then we put the cubes in a pan with a little oil and salt.
  • Once the potatoes are tender, let them cool first and then peel them to mash using a potato masher or a fork. Add cooked pumpkin, mix everything well. Add salt and pepper and season with your favorite spices.
  • Add the eggs and cheese, mix well and add the bread crumbs to dry the dough and form croquettes.
  • Flour your hands and form patties (add a mozzarella cube if you’d like) by crushing them a little.
  • Roll the meatballs in breadcrumbs, place on a baking sheet, drizzle with oil, and bake for 15 minutes.
  • Once done, let the meatballs rest for a few minutes and serve.
