Nero rice, roasted carrots with honey and feta cheese

Do you know black rice? It’s also called venere rice, nerone, I really appreciate it for its satiating ability but also for its slightly different taste than white rice. I decided to mix it with roasted carrots with honey and thyme for a dish full of flavor and easy to prepare 🙂

Ingredients

For the dish:

  • 200 g black rice (also called Rice Fenner, Nero)
  • 8 young carrot complexes
  • olive oil
  • Dried herbs of your choice (Thyme, basil…)
  • 1 cc honey
  • 100 g from feta
  • fresh coriander or parsley
  • Salt and Pepper

For dressing:

  • 1 issue mustard
  • 1 cc honey (or agave syrup)
  • 5 issue Sesame oil (or hazelnut)

instructions

  1. Put the black rice in a pot of cold water. Cook on medium heat for twenty minutes.

  2. Heat the oven to 180 degrees. Peel the carrots and cut them in half lengthwise. Put it on a plate, add olive oil and dried herbs. Mix, then bake for 25 minutes. Halfway through cooking, add honey and stir.

  3. Add crumbled feta cheese during the last five minutes of cooking.

  4. Make the vinaigrette: In a bowl, mix the mustard and honey, then add the sesame oil.

  5. Arrange the Nero rice on a plate with the roasted carrots. Season with salt and pepper, add chopped coriander and serve with vinaigrette!
