Chewy sweet potatoes and avocado tacos

A delicious, new seasonal recipe that will be perfect for lunch or dinner. Tender tacos topped with sweet potatoes, raw vegetables and creamy guacamole… 🙂

Chewy sweet potatoes and avocado tacos

Preparation time 1 hour

Ingredients

For the dough (it is also possible to use pita bread)

  • 15th a key warm water
  • 1 cc honey
  • 10 g Fresh baker’s yeast
  • 250 g Wheat flour (t45 to t80)
  • 1 cc salt

To decorate:

  • 300 g sweet potato
  • olive oil
  • paste (or arugula, another salad…)
  • red cabbage
  • 4 Slices Bacon (my choice)
  • 1 Attorney
  • 1/2 lemon
  • salt pepper
  • fried onions

instructions

To prepare the dough:

  1. Start preparing the dough: In a salad bowl or kneading bowl, put lukewarm water, fresh baker’s yeast, and honey. Mix once, then add flour and salt.

  2. Knead the dough by hand or by robot until very soft. Place it in an oiled bowl, cover it with a kitchen towel and let it rest for at least an hour (up to a maximum of two hours).

  3. Then empty the dough and divide it into four pieces. Let the paste rest under the tea towel for 15 minutes.

  4. Heat a frying pan (or plancha) to maximum. Roll out the dough pieces on a disc about 5 mm thick on a floured work surface. Bake each disk of dough for 30 seconds on the tail side, 30 seconds on the face side, and then again for 30 seconds on the tails side.

  5. When the tacos are done, fold them in half and set them aside.

To decorate:

  1. Preheat the oven to 180 degrees (convection heat). Peel and cut the sweet potatoes into circles about 1 cm long. Add a little olive oil to the sweet potatoes, then place them on a baking tray covered with baking paper. Bake for 30 minutes.

  2. Roast the bacon in a skillet over high heat and set aside.

  3. Rinse the lamb lettuce, chop the red cabbage fine and make the guacamole: in a blender, put the peeled avocado, the juice of half a lemon, salt and pepper and blend until a homogeneous consistency is obtained.

  4. Garnish the tacos with guacamole, lettuce, red cabbage, bacon, and sweet potato chips before sprinkling them with fried onions and enjoying!
