I’ve been working on this recipe for a long time to bring you a healthy but still delicious version of the basic Tarte Tatin! 🙂 I am happy today to share this recipe with you, which I hope you will like and will allow you to enjoy

Healthy tatin tart

Materials needed: Metal mold with a diameter of 18 to 20 cm

Preparation time 20 Minutes
cooking time 30 Minutes


Ingredients

For the dough: (it is possible, of course, to take a pie or a shortbread)

  • 1 an egg
  • 20 g olive oil (or deodorized coconut)
  • 40 g agave syrup (or honey)
  • 150 g Wheat flour (t45 to t80)

To prepare the caramel and garnish:

  • 6 An apple
  • 40 g Coconut Blossom Sugar (or regular sugar, blond)
  • 80 g Coconut cream (or fresh cream)
  • 1 A sprinkle of Fleur de Sel
  • 1 issue Coconut Oil
  • 1 issue agave syrup (or honey)

  1. Start with the caramel: In a small saucepan, put the sugar and cream. Heat over medium heat without stirring (shake pan only) for ten minutes.

  2. At the end of cooking, caramel is poured onto the bottom of a metal mold with a diameter of 18-20 cm. Let it cool.

  3. To prepare the dough: In a bowl, put the eggs, olive oil and agave syrup. Mix well and then add the flour. Mix again by hand until you get a nice homogeneous paste. If necessary, add a little flour (it depends on the weight of the egg and the flour chosen)

  4. Place the flour on a work surface and roll the dough into a circle the same size as your mould. Reserve in the refrigerator.

  5. Preheat the oven to 200 degrees (convection or conventional heat).

  6. Peel and cut the apples into 4s. Heat a large frying pan over a medium heat with the coconut oil and fry the apples for 10 minutes, stirring regularly.

  7. Arrange the grilled apple slices on the cooled caramel in the pan. Do not hesitate to squeeze the apples well so that you do not have a void after cooking.

  8. Cover with a circle of dough and then make a chimney in the middle. Prick it in a few places with the tip of the knife. Bake for 20 to 25 minutes, until the pastry is golden.

  9. At the end of cooking, let cool for 10 minutes before flipping the tart tart onto a plate (be careful, it’s hot!) For a glossy finish, add a little agave syrup or honey to the tart with a brush. Enjoy warm or cold and store in the refrigerator for 4 to 5 days! 🙂
