New recipe for the bottom cupboard 😉! Is your refrigerator nearly empty? The rice, pea and parmesan pancakes would be perfect and delicious with a little white sauce or salad

Rice, peas and parmesan cakes

Ingredients

  • 150 g Chilled cooked rice (preferably round rice)
  • 130 g Peas and carrots
  • 40 g grated parmesan
  • fresh parsley
  • olive oil

To prepare the sauce:

  • 100 g Greek yogurt (or cream cheese) (or fromage blanc, skyr…)
  • salt pepper
  • fresh parsley

To prepare the sauce:

  • fresh parsley


instructions

  1. In a salad bowl, combine rice, peas/carrots, grated Parmesan cheese, and chopped fresh parsley.

  2. Form balls using the palms of your hands and then roll them out to make small patties.

  3. Heat a frying pan over a medium heat with a little olive oil. Once hot, brown pancakes for 3 minutes on each side.

  4. Meanwhile, prepare the white sauce: In a bowl, mix together Greek yogurt, salt, pepper to taste, and fresh parsley.

  5. Let the galette cool before enjoying the white sauce!
