Easy lentil terrine

A very simple vegetable dish for making appetizers or snacks, based on lentils of course they will never replace the taste of meat, but this recipe is perfect for variety 🙂!

Easy lentil terrine

Preparation time 15th Minutes
cooking time 20 Minutes


Ingredients

  • 70 g green lentils
  • 70 g coral lentils
  • 1 shallot
  • 100 g round mushroom
  • 1 issue olive oil
  • 1 issue Armagnac or cognac
  • 2 berries juniper
  • salt pepper
  • Thyme and fresh parsley
  • 2 g agar agar powder
  • 1 binding laurel
  • Bread to taste!

instructions

  1. Put the lentils in a pot. Cover with water and cook over medium heat for twenty minutes.

  2. Meanwhile, chop the leeks and mushrooms. Fry everything in a lightly oiled frying pan for ten minutes. At the end of cooking, set it aside.

  3. When the lentils are cooked, filter the lentils into a fine strainer to remove as much water as possible.

  4. Put the lentils in a large bowl. Chop the leeks and cooked mushrooms with a large knife. Add everything to the salad bowl. Add the Armagnac, salt, pepper, thyme and chopped parsley. Mix well.

  5. In a small saucepan, pour the equivalent of 5 cl of water. Add agar-agar powder and mix. Leave this preparation to boil. (This step can be done in the microwave) Once it is hot, add it to the salad bowl and mix one last time.

  6. Fill a small glass bowl, and press well with a spoon. Add a bay leaf on top and keep in the fridge for at least 3 hours before serving with good slices of toast!
